In preparation for the Stackwood Food swap collaborative event with Kookery, I have collected a lot of citrus.
Limes, lemons gifted from trees of friends, and oranges from our tree.
There is something divine about the scent of citrus.
It's Friday, it has been a big week, and I feel tired. But the simple joy of stopping to smell the citrus and this beautiful morning light, helps to restore me like a good cup of tea.
So why all the citrus peel?
Well for those who know me, honey is a stable for me. I have it everyday, in tea, on toast wherever it has a justifiable use.
Using the peel of 3 oranges, 2 limes, and 2 lemons I have about 150gram of peel all sliced.
Pop them into boiling water and boil for 4 mins. Sieve them, dry them on paper towel.
Place them on a tea towel on a drying rack in a warm place and wait until dry. I will be putting them in a low oven to speed this up, so I can jar them tonight.
Then place in sterilised jar. Then cover with golden delicious honey.
They need to be left for at least a couple of months before you can use them, but those little slices of citrus joy will be ready in winter for baking or to have on ice cream.
